Paarai Karuvadu Kuzhambu
Paarai is firmer and slightly oilier than most of our small-fish varieties, so it holds its shape well in a slow-simmered tamarind gravy instead of breaking apart — a step up from the everyday varieties for those who want a more substantial piece.
This recipe uses Paarai Karuvadu – Dried Trevally, a traditional South Indian dry fish variety available to order online from Thenkadal Karuvadu.

Preparation
Rinse the paarai pieces in warm water. It has a moderate number of bones typical of a mid-sized fish, so check pieces if cooking for children.
Step-by-Step Instructions
- 1Heat oil, splutter mustard seeds, add curry leaves and onion; sauté till translucent.
- 2Add tomatoes, cook till soft, then stir in chilli, turmeric, and coriander powder.
- 3Add tamarind water and 1 more cup of water; bring to a boil, then simmer 8–10 minutes.
- 4Add the paarai pieces, simmer another 12–15 minutes — a little longer than smaller fish need — until the gravy thickens and the fish is cooked through.
- 5Taste and adjust salt before serving.
