Long before refrigeration, coastal Tamil Nadu communities turned to sun-drying and salting as a way to preserve the day's catch — a practice that's still followed today, largely unchanged. Karuvadu has held a steady place in South Indian home cooking for generations as a result, valued as much for convenience and flavor as for its place in the kitchen. Like any food, what you get out of it nutritionally depends on the specific fish, how it's prepared, and how much you eat — here's an honest look at what that generally means.
Protein
Seafood, including dried fish, is generally a source of protein — drying also concentrates protein per gram compared to the fresh fish it came from, since water content is removed. Calcium
Some of our smaller, whole-eaten varieties — where the fish is small enough that the softened bones are eaten along with the flesh — can contribute meaningfully to calcium intake. This isn't true across the board: larger cuts where bones are removed or discarded won't offer the same benefit. We avoid claiming every karuvadu variety is "high in calcium," since that depends entirely on which one and how it's eaten.
