Why Storage Matters More Than People Think

One of the biggest advantages of karuvadu over fresh fish is shelf life โ€” traditionally sun-dried fish, stored correctly, stays good for 4 to 6 months. But moisture is the enemy: even a little humidity can undo weeks of careful sun-drying.

The Basics: Cool, Dry, Airtight

Always store karuvadu in an airtight container โ€” a glass jar with a tight lid or a zip-lock bag both work well. Keep it in a cool, dry place away from direct sunlight and away from the stove, where steam and heat can introduce moisture.

Avoid storing it in the same container as onions, garlic, or other pungent items, since dry fish absorbs odours easily.

For Longer Storage, Use the Refrigerator

If you've bought in bulk or want it to last beyond a couple of months, refrigeration is your best bet. Pack the karuvadu in a sealed container or bag before placing it in the fridge โ€” this prevents it from drying out further or picking up smells from other food.

For very long-term storage (6+ months), the freezer works too. Just bring it back to room temperature before cooking for the best texture.

Signs Your Karuvadu Has Gone Bad
