Preparing Maasi Karuvadu – Dried Skipjack Tuna
Remove any unwanted portions, rinse away surface salt and loose particles, and drain thoroughly. A short soak can help with thicker or tougher pieces; small fish often need only a careful wash. Taste a cooked piece before adding extra salt to the recipe. Step by step: how to clean karuvadu and how to reduce the salt.
Used in small amounts as a flavour base. Grate or pound it for sambal and poriyal; it is not soaked like other karuvadu.
Salted, sun-dried skipjack tuna in the same tradition as Maldivian "Maldive fish" — dense, smoky, and intensely savory. Used sparingly as a condiment rather than a main dish. It works especially well for sambal, poriyal.
