This recipe uses Paarai Karuvadu – Dried Trevally, a traditional South Indian dry fish variety available to order online from Thenkadal Karuvadu.

Preparation

Rinse the paarai in warm water and pat dry. If pieces are large, cut them down slightly so they fry through evenly.

Step-by-Step Instructions

  1. 1Toss the rinsed paarai with chilli powder, turmeric, and coriander powder; let it sit 10 minutes.
  2. 2Heat oil in a pan, add curry leaves and sliced onion, sauté until the onion softens.
  3. 3Add the marinated paarai and spread it in a single layer.
  4. 4Pan-fry on medium heat, turning occasionally, 10–12 minutes — a little longer than smaller fish — until crisp outside and cooked through.
  5. 5Drain excess oil and serve hot.

Cooking Tips

  • Because paarai is firmer and oilier, medium heat works better than high heat, so it cooks through without burning the outside.
  • Don't overcrowd the pan — fry in batches for even crisping.

Common Mistakes to Avoid

  • Adding salt without tasting first — it's already salted.
  • Frying on too-high heat, which can char the outside before the inside is done.
  • Checking bones only after serving — paarai has a moderate number of bones typical of a mid-sized fish.
