Karuvadu vs Fresh Fish: What Is the Difference?

Flavour and texture
Fresh fish has higher moisture and a milder flavour. Karuvadu has been salted and dried, so its flavour is more concentrated and its texture changes with soaking and cooking.
Storage and convenience
Fresh fish needs prompt refrigeration and cooking. Properly dried fish is easier to keep for longer, but it must be protected from humidity and strong odours in airtight packaging.
When each makes sense
Choose fresh fish when you want a mild centrepiece. Choose Karuvadu when you want a concentrated ingredient for a fry, kuzhambu, thokku, or side dish and appreciate its traditional coastal character.
